Seafood BatterSEAFOOD BATTER MIX
We think seafood calls for a little more spice. That is why we offer a special seafood batter. We have fishermen from the coast that say it is the best. It has a bit of a Cajun spice, but not too much. It is great on fillets, like catfish, but is also an awesome batter for shrimp or crab claws. For people who like their chicken a little spicier, try the Seafood Batter on chicken.

It can be used as a dry batter, dipping in an egg mixture then into the batter; or as a wet batter, mixing the ingredients together and adding more or less water for consistency. Delicate fish tend to do better with the dry version. Shrimp and crab claws can be done either wet or dry. This WhistleStop batter mix can also be used for baking rather than frying for a crispy coating.

*Fried Crab Claws
Rinse crab claws and pat dry. Batter individually and gently place into hot grease. Serve with cocktail sauce. *Battered Shrimp
Batter shrimp and fry according to directions for light and delicious fried shrimp.

*Down Under Coconut Shrimp
Mix coconut flakes in with the dry batter mix in a dish. Dip large shrimp in egg mixture according to directions then in the coconut spice mixture. Cook until golden brown.

*Baked Tilapia
Dip fillets first into egg mixture then batter to coat. Place fish on a cookie sheet that has been coated with non-stick spray. Bake @ 400 15-25 minutes until done.

*Trout Almandine
Batter fish fillets and place on a cookie sheet, skin side down. Top with sliced almonds. Bake @ 400 15-25 minutes until done.
